The special structure that it demonstrates at an initial tasting destines it for oxidative ageing

then foot-trodden and fermented with roughly 20% whole bunches in large wooden tronconique vats before spending between 12 and 24 months in neutral 600-litre barrels (and some very old barriques)

supported by lively acidity and structure

Pyramid Valley North Canterbury Chardonnay 2022 beaumes-de-venise 30% Grenache BlancThe North Canterbury Chardonnay comes from two vineyards, principally Waipara Springs, where old vine Mendoza Chardonnay grows on the Omihi clay soils. This years release includes one barrel of first crop Chardonnay from Pyramids organic Central Otago farm in Lowburn. Hand harvested several weeks later than in 2021, the must fermented with indigenous yeasts and aged in 20% new French oak and 40% concrete Tuilpes for 12 months before settling in
