Fermentation started with pied de cuve a spontaneous fermentation and was followed by twenty days of skin maceration in small tanks without temperature control. After pressing, the wine rested for five months in steel tanks. The bottling was done without fining or filtering, and completely without additives. The skin contact gives the wine slightly floral
