Lakridsen har sin karakteristiske smag, fordi den fremstilles af det fineste lakridspulver, og fordi den frembringes af Maillard reaktionen, hvor mlkeprotein og sukker reagerer med hinanden i gryden. Efter kogning hldes lakridsen i forme, hvor den hrder natten over, inden den hndskres og pakkes. Lakridsen udskres med en robust kniv.
